Hong Kong Style Satay Beef with Macaroni (沙嗲牛肉通粉)

One of the most commonly found breakfast/lunch item in local Hong Kong cafe is the Hong Kong Style Satay Beef with Macaroni (沙嗲牛肉通粉).  Let's see my simplified recipe:


Ingredients:
2 cups   Macaroni
1/2 lb    Beef (thinly sliced)
6 cups   Chicken Stock
1/2 cup  Frozen Vegetables (Corn & Pea)
4 Tbsp  Chinese Satay Sauce
1 Tbsp  Peanut Butter
1 Tbsp   Curry Powder
1 pinch  Salt & Pepper



Method:

  1. Cook macaroni according to package instruction until soft and tender
  2. In a pot, heat up the chicken stock and add in frozen vegetables.  Season with salt and pepper to taste
  3. In a sauce pan, heat up oil and stir fry the beef until lightly browned and cooked. Then remove from heat and set aside
  4. In the same sauce pan, stir fry the satay sauce, peanut butter, curry powder and 1/2 cup of chicken stock until well mixed and thickened.  Season with salt and pepper to taste, then add the beef back into the sauce
  5. To serve, put macaroni in a soup bowl, add chicken stock then top with the satay beef mixture.
