If you want quick lunch/dinner in 15 minutes and you happened to have some Korean kimchi and leftover steamed rice at home, you can make a very yummy kimchi fried rice. I personally love to add a sunny side up egg. It's so flavorful and yummy when you mix the egg yolk with the fried rice.
Ingredients:
3 Eggs
3 cups Steamed Rice
1 cup Kimchi (chopped in small pieces)
1/2 cup Kimchi juice (in the kimchi jar)
1 stalk Green Onion (chopped)
1/2 cup Zucchini (diced)
1 Tbsp Soy Sauce
2 Tbsp Gochujang (Korean Red Chilli Paste, you can skip this if you don't it too spicy)
Salt & Pepper to taste
Serve 3

Method:
- Make the eggs to your liking, set aside
- Heat up oil in the pan, add chopped kimchi and zucchini. Cook until zucchini is translucent.
- Add rice and stir fry with the kimchi juice, then stir in gochujang, salt and pepper to taste
- Finally add green onion and serve hot with the fried egg on top
