Hong Kong Style Pineapple Buns (菠蘿包)

What is Hong Kong Style Pineapple Buns? It is a very popular bread/bun in Hong Kong.  People eat it for breakfast or even as a snack in the afternoon.  There is actually no pineapple inside the buns and it doesn't taste like pineapple at all.  Why is it called Pineapple buns?  It's just because the pattern on top of the buns looks like pineapple.



Ingredient: (makes 10 buns)

For the top crust:

100g         Flour
70g           Sugar
40g           Butter (room temperature)
1 Tbsp      Milk Powder
1 ea          Egg Yolk
1-2 Tbsp   Milk
1 Tbsp     Condensed Milk
1/4 tsp      Baking Soda
1/8 tsp      Baker's Ammonia Powder (you can use baking powder instead)

1/2 egg and 1 Tbsp water for the egg wash

Method:

  1. Prepare bread dough per recipe above, you'll need 600g of bread dough
  2. Divide the dough into 60g each, roll them into balls and let rise until doubled in size
  3. Mix all the crust ingredients in a mixing bowl, add milk to turn it into a soft dough (1 Tbsp of milk at a time)
  4. If the dough is too soft to handle, wrap it with plastic and refrigerate for 30 minutes.
  5. Pre-heat oven to 375F
  6. Divide the crust dough into 10 balls and flatten it into thin rounds.  It's easier to roll it flat between 2 plastic wraps as the dough is really soft and sticky.
  7. Place the crust on top of each bun 
  8. Brush each one with egg wash and bake for 10 minutes or until golden brown.
