No Knead Baguette

I really love this recipe as it is really simple.  Anyone can do it.  All you need to do is just mix all the ingredients, leave it to rise overnight (12-18 hours) and bake.  It's not the fastest way to make bread but it's so easy that even a 5 year old can do it.


Ingredients:

2 cups    Flour
1 tsp       Yeast
1 cup     Warm water
1 Tbsp   Salt

Method:

  1. In a large mixing bowl, mix all the ingredients together.  It'll be a very lumpy and rough dough.  Add more water if needed
  2. Don't worry if it doesn't look like any regular bread dough at this point.
  3. Cover with plastic wrap and leave it in a warm counter overnight.  Yes, leave it on the counter and don't touch it for the next 12-18 hours.
  4. After 12 hours, the dough should be doubled in size.  You can even leave the dough for 18-24 hours.
  5. On a well floured surface, turn the dough over and roll it into the shape you want.  In my case, I rolled it into a long roll like a baguette.  Score the bread with a shape knife.
  6. Place the baguette onto a parchment paper and cover it with towel.  Let it rise while you heat up the oven
  7. Put a pizza stone in the middle rack of the oven and preheat the oven to 450F
  8. When oven is heated up to 450F, spray the baguette with water then slide it onto the pizza stone.  Bake for 10 minutes.
  9. After it baked for 10 minutes, open the oven door and quickly pour 1/4 cup of water into the hot oven.  The steam will help creating a crunchy crust.
  10. Continue to bake for another 20 minutes until it's golden brown.
