Spicy Kimchi Fried Hand-cut Noodle

Simple Korean fried noodle that you can make at the comfort of your own home.  To make it more fun, you can make your own noodle.


Ingredients: (1 serving)

Hand-cut Noodle:
1 cup       All Purpose Flour
2 tsp        Cornstarch
3/4 cup    Water
1 pinch    Salt

Fried Noodle:
1 cup      Kimchi
1 Tbsp   Chopped Onion
1/4 cup  Chopped Carrot
1 clove  Minced Garlic
1 Tbsp   Gochujang (Korean Chili Paste)
1 Tbsp   Sesame Oil
1 tsp      Sugar
1 Tbsp  Soy Sauce
1 Tbsp   Sesame Seeds

Method:
For the hand-cut noodle:

  1. In a bowl, mix together flour, salt and cornstarch
  2. Pour in water and knead into a dough
  3. Knead until smooth and let it rest for 30 minutes
  4. After it's rested, turn it into a well-floured surface and roll it to a large rectangle dough around 1/8" thick 
  5. Use a sharp knife to cut the noodle into thin strips
  6. Boil a pot of water, add pinch of salt and cook the noodle until it floats to the top
  7. Drain and rise with cold water...set aside
Stir Fry the Noodle:
  1. Heat up a pan and add oil
  2. Cook the onion and carrot until softened
  3. Add noodle into the pan and stir fry with Gochujang, sugar and soy sauce
  4. Once mixed well, turn off the heat and add sesame oil
  5. Sprinkle sesame seeds on top and serve hot
You can add any meat of your choice too.
