Castella Sponge Cake 古早味蛋糕

Fluffy sponge cake that I can’t stop eating it. 


Ingredients 

80 g   Flour
10 g   Cornstarch  
75 ml Vegetable Oil
60 ml Milk
6 eggs
6 Tbsp Sugar
1/4 tsp Salt
1/4 tsp Cream of Tartar

Preheat oven 300F
Prepare water bath: Put a large pan fill with 1/2 inch of water into the oven. Make sure it’s large enough for the 8x8 baking pan for the cake
  1. Separate egg whites and egg yolks
  2. Heat up the vegetable oil in microwave for 1 minute 
  3. In mixing bowl, mix together flour, cornstarch and salt
  4. Pour hot oil into flour mixture and whisk until smooth
  5. Mix milk into the flour batter then add egg yolks and mix well
  6. In a clean bowl, whisk egg whites, cream of tartar and sugar until stiff peak
  7. Fold egg yolk flour batter into egg white until incorporated 
  8. Line a 8x8 baking pan with parchment paper
  9. Pour batter into the lined baking pan
  10. Bake in water bath for 1 hr 
  11. Cake is done when the top is golden brown and you insert a tooth pick at the center and it comes out clean
