Japanese Souffle Pancake

Fluffy, light and yummy.  Perfect for afternoon tea or even dessert.


Ingredients:
3          Eggs (separate the whites and yolks)
3 tsp    Sugar
3 Tbsp Milk
3 Tbsp  Flour
1/4 tsp Cream of Tartar
1 tsp    Vanilla Extract
1 tsp    Butter

Make 6 pancakes

Method:

  1. Separate egg whites and yolks in 2 mixing bowl
  2. Mix egg yolks with flour, milk and vanilla extract
  3. In a clean mixing bowl, beat egg whites with cream of tartar until foamy
  4. Add sugar into egg white and beat until stiff peak
  5. Gentle fold the egg yolk mixture into egg white
  6. Heat up a non-stick pan or a griddle on low heat
  7. Brush with butter
  8. Divide the batter into 6 pancakes (around the size of tennis ball)
  9. Cook each side for about 2 minutes
Serve hot with your favorite jam or chocolate sauce topped with whipped cream
