Instant Pot BBQ Ribs

If you own an instant pot, you'll probably love it by now.  It's so easy to make fall off the bones ribs using the instant pot.

Ingredients:
1 rack    Baby Back Ribs
1 cup    Mirin
1 cup    Rice Wine Vinegar
1 cup    Water
1 Tbsp  Ketchup
2 Tbsp  Sugar/Honey

Dried Rub:
1 Tbsp   Grounded Ginger
1 Tbsp   Minced Garlic
1 Tbsp   Parsley
1 tsp      Sugar
2 tsp      Salt
2 tsp      Pepper
2 tsp      Cayenne Pepper

Turmeric Rice:
1 cup    Rice
1 cup   Chicken Stock
1 tsp    Turmeric Powder

Method:

  1. Combine all the dry rub mix together in a bowl
  2. Clean the ribs and pat dry
  3. Sprinkle the rub all over the rib and let it marinate for at least 30 minutes 
  4. Put the Kirin, rice wine vinegar and water into the instant pot  
  5. Put the rub along side the instant pot.  You can cook as many ribs as you can fit in it for the same amount of cooking time 
  6. Set instant pot to pressure cook for 9 minutes (make sure it is at sealing position)
  7. Natural release for 10 minutes
  8. Take the rib out and pour the liquid into a small sauce pot. 
  9. To make the BBQ sauce, add ketchup, sugar/honey into the sauce pot.  Turn on the heat and reduce in half
  10. Brush rib with the BBQ sauce
  11. Finish the rib at your BBQ grill or oven boiler on high.  Grill it with additional BBQ sauce until it is nicely done 


To make the Turmeric rice in pot-in-pot method:

  1. Combine rice, turmeric powder and water in a heat proof container that fit inside your instant pot
  2. Put 2 cups of water in the instant pot
  3. Put the container with rice on a trivet and put them inside the instant pot
  4. Cook on high pressure for 8 minutes (make sure it is at sealing position)
  5. Natural release and rice is done
Dinner is ready with fall off the bones ribs, rice and your choice of vegetable.  Since I was grilling the  ribs, why not grill some  asparagus as well.  Just tossed some salt, pepper and olive oil on whatever vegetable you want to grill and grill it.  It'll be yummy!
