Stuffed peppers and bitter melon (煎釀三寶) is a popular Hong Kong street food. You will find it in many street food stalls. It's basically stuffed vegetables in all kind such as bell peppers, chili peppers, bitter melons, eggplants and tofu.
Ingredients:
1 pc Bell Pepper (I like to use green and yellow)
1 pc Small Bitter Melon
1 can Minced Fish Paste (you can find it at Chinese supermarket)
1 Tbsp Black Been Sauce
1/4 cup Chicken Stock
1 pinch Salt & Pepper
1 Tbsp Cornstarch

Methods:
- Cut bell pepper into small pieces, and cut bitter melon into rings
- Dusk the bell pepper and bitter melon with corn starch
- Stuff minced fish paste onto the pepper and bitter melon
- Pan fried until fish paste is cooked and golden brown
- Remove all the peppers and bitter melon from pan, add black been sauce and chicken stock
- Cook until thicken then pour sauce over the cooked stuffed peppers
