We love getting roasted duck from Chinese BBQ stores but we usually cannot finish the whole duck. What should we do with the leftover roasted duck? You can either make a sandwich with it or like in our case, you can make a stir fried noodle dish out of it. It's supper yummy and easy to make. It's pretty much stir frying all the leftover meat and vegetables in your fridge.
Ingredients:
1 pk Vermicelli Noodle
1 cup Roasted Duck (cut into small pieces)
1/2 Onion
2 Green Onion
1 cup Cabbage
1/3 cup Chicken Stock
2 Tbsp Oyster Sauce
2 Tbsp Dark Soy Sauce
4 Shiitake Mushroom (slices)

1 pk Vermicelli Noodle
1 cup Roasted Duck (cut into small pieces)

Method:
- Soak vermicelli in hot water until soft
- Put oil in pan and stir fry the roasted duck, onion, cabbage and shiitake mushrooms until soft.
- Add the vermicelli noodle into the pan and mix with the stir fried vegetables
- Stir in chicken stock, oyster sauce and dark soy sauce into the noodle and mix well
- Salt and pepper to taste
It's done. A yummy quick noodle lunch/dinner is served.
