Seared Scallops with Pasta


Ingredients: (for two)

8 pieces    Scallops
1/2 pkg     Pasta of your choice
1 cup         Dry White Wine
1 cup         Broccoli (chopped in small pieces)
3 Tbsp       Butter
1/4 cup      Heavy Cream
1/4 cup      Seafood Stock (or Chicken Stock)
                  Salt & Pepper

Method:

  1. Boil a pot of water and cook pasta according to package direction, drained and set aside
  2. Clean scallops and dry them with paper towel
  3. Season scallops with salt and pepper
  4. Heat up a pan to medium high heat, seared scallops for about 1 minute on each side or until brown and cooked through.
  5. Set scallops aside and keep warm while preparing the sauce for pasta
  6. Use the same pan, deglaze pan with white wine and seafood stock, add broccoli and cook for 2 minutes
  7. Add heavy cream and butter and cook until sauce is thickened
  8. Return pasta to the sauce and mix well
  9. Serve pasta and top with seared scallops
