Thai Sweet Chili Prawns with Broccoli


Ingredients:

1 lb       Prawns
2 cups   Broccoli  
2 Tbsp  Thai Sweet Chili Sauce
1 tsp     Salt
1 tsp     White Pepper
1/2 cup Cornstarch 
1 Tbsp  Sesame Seeds (optional)
1 cup    Vegetable Oil
1 tsp     Chopped Garlic
1 tsp     Chopped Ginger


Method:
  1. Peeled the prawns and devein the prawns
  2. Clean the prawns and rise under running water for 5 minutes.  This will make the prawns with better texture
  3. Season the prawns with salt and pepper
  4. Cook the broccoli until soft or to your liking.  Set aside.
  5. Dust the prawns with cornstarch until well coated.  You can also put the cornstarch and prawns into a paper bag and shake the bag until every prawn is well coated with cornstarch but not too thick
  6. I use a small sauce pot to fry the prawns so I can use less oil.  Heat the oil in medium high heat then fry the prawns until cooked and golden. 
  7. Heat up a sauce pan in medium high heat.  Stir fry the ginger and garlic until fragrant
  8. Add Thai chili sauce into the pan, then add the fried prawns
  9. Stir fry until all the prawns are coated with the sauce
  10. Plate it with broccoli and sprinkle sesame seeds
